today was ridiculously busy and long at work. longer than randy the basset hound.. and he is looooong.
consequently, this post is gonna be snappy.
furthermore, my spacebar keeps sticking. that’s what i get for taking my laptop into the kitchen while cooking. doh.
i had a three hour long meeting this morning and i was in charge of grabbing bagels for the group.
i obliged, but not without snagging a spinach, mushroom and egg white bagel sandwich for my own breakfast. i am all about bagels, but i gotta balance it out with some protein.
after my meeting, i had to get right to work on some important tasks. before i knew it, it was ONE O’CLOCK.. well past my lunchtime. i had a sudden pang in my stomach and looked at the clock.. i was surprised to see it was already so late in the day.
enter: late lunch.
tuna salad sandwich + veggies.
this is what goes into my tuna salad: one packet of tuna (100 cals, 20g protein), 1 TB low fat mayo, 1-2 TB fat free plain greek yogurt, two diced dill pickles, squirt of mustard.
i usually like to add celery to the tuna salad, but i didn’t today. i did pair it with another green veggie: lettuce. then sandwiched it between two slices of whole wheat bread.
veggies on the side. steamfresh to the rescue.
i ended up working a nine hour day and the only snack i had on hand was this new to me ready to drink protein shake:
i took one swig and gagged. not a good flavor, folks. i didn’t drink it. DON’T BUY IT! well, unless you are into nasty tasting stuff. then you should for sure buy it.
instead, i got home and ate two of teri’s healthy pumpkin cookies (i made a batch last night.)
then it was straight to the gym for this little number…

i came home and didn’t want to make a big production out of dinner since it was almost 8 PM. marshall said he wanted something with chicken and rice. i had a big ol’ bag of lemons. so, i perused the interwebs and found a few recipes for lemon chicken and rice. i loosely followed them to make a one pot wonder of my own.

i usually wear this dress in the summer without a cardigan or tights, but it is easily converted into a winter wearable piece.. i do this same thing with all my sundresses. such a good money saver!
