one pot wonder.

today was ridiculously busy and long at work. longer than randy the basset hound.. and he is looooong.

consequently, this post is gonna be snappy.

furthermore, my spacebar keeps sticking. that’s what i get for taking my laptop into the kitchen while cooking. doh.


i had a three hour long meeting this morning and i was in charge of grabbing bagels for the group.


i obliged, but not without snagging a spinach, mushroom and egg white bagel sandwich for my own breakfast. i am all about bagels, but i gotta balance it out with some protein.


after my meeting, i had to get right to work on some important tasks. before i knew it, it was ONE O’CLOCK.. well past my lunchtime. i had a sudden pang in my stomach and looked at the clock.. i was surprised to see it was already so late in the day.

enter: late lunch.

tuna salad sandwich + veggies.


this is what goes into my tuna salad: one packet of tuna (100 cals, 20g protein), 1 TB low fat mayo, 1-2 TB fat free plain greek yogurt, two diced dill pickles, squirt of mustard.


i usually like to add celery to the tuna salad, but i didn’t today. i did pair it with another green veggie: lettuce. then sandwiched it between two slices of whole wheat bread.

veggies on the side. steamfresh to the rescue.


i ended up working a nine hour day and the only snack i had on hand was this new to me ready to drink protein shake:


i took one swig and gagged. not a good flavor, folks. i didn’t drink it. DON’T BUY IT! well, unless you are into nasty tasting stuff. then you should for sure buy it.

instead, i got home and ate two of teri’s healthy pumpkin cookies (i made a batch last night.)


then it was straight to the gym for this little number…

i came home and didn’t want to make a big production out of dinner since it was almost 8 PM. marshall said he wanted something with chicken and rice. i had a big ol’ bag of lemons. so, i perused the interwebs and found a few recipes for lemon chicken and rice.  i loosely followed them to make a one pot wonder of my own.

keeping my word to post all of my outfits this week, i took more photos of what i wore today:


sorry for the horribly blurry photo.  it is just not convenient to take full length shots anywhere i am. the photo above was taken at work.. yes we have a random weight room that never gets used. i need to get a mirror mounted on my wall at home soon.

  • sundress: forever 21 ($25)
  • black camisole: victoria’s secret (3 for $30)
  • cardigan: nordstrom ($30)
  • opaque tights: forever 21 ($4)
  • slouchy suede boots: roxy ($60)

i usually wear this dress in the summer without a cardigan or tights, but it is easily converted into a winter wearable piece.. i do this same thing with all my sundresses. such a good money saver!

well.. it is ten o’clock. yikes. good night!


1. what is the last food/drink you tried and hated? that EAS vanilla cream protein shake above was disGUSTing.

2. what is the busiest day of the week for you? tuesday or thursday for me. it’s a toss up.

you look so darn cute in your outfit!! i could NEVEr pull off a sundress like you can! damn I wish I could :(

i have heard nasty things about that RTD as well! good to know that it really is gross, i will not waste my money! The grossest drink I have ever had hmmmm I will have to think about that one!

Busiest day of the week for me is a combo of Tues/Wed and the worst thing i’ve drank recently is a cranberry kombucha! I love (almost) all the flavors of kombucha but I just couldn’t stomach that one!

Your treadmill workout sounds intense, I miss treadmill workouts. Maybe one day I can afford to get a treadmill.

These past 3 days have been very busy, and tomorrow will be too, ugh…long week for sure

I know I SUCK at commenting anymore, but I do still read!!! I wanted to let you know that you could walk around wearing a paper sack and you’d still look cute, but I do love your outfit choices of late that you’ve posted pics of. :)

I LOVE Myoplex Lite Chocolate Fudge but the Vanilla makes me want to gag. BLECH! To be honest I think the last thing I ate that I hated was some baked chicken I made with Thai breadcrumbs. I don’t know if the breadcrumbs were old or I just wasn’t in the mood for chicken but I had to chuck it.

1. The worst thing I tried lately was figs!! I don’t know why but don’t like them!!
2. Busiest day has to be Wednesday. It’s a non stop day/night for me!

mondays are the WORST days for me. anything that didnt happen over the weekend gets piled on monday. plus the float MDs are usually covering for the medicine patients over the weekend so monday means you have to do all the shi!t that your hands were tied from doing the past 48 hours…
anyway, i keep trying the coconut water hoping to like it and i DONT. cooking with it has been my last resort (i have a case from the company to use up)
