1. i woke up with snow on my car!!

i love snow. love love love. i know there are a lot of haters out there, but honestly.. i adore the snow.

no, i don’t like driving in the snow or being irregularly cold, but the tradeoff that comes with the bad stuff is worth it. snowboarding. catching flakes on my tongue. the sight of everything looking like it is covered in a thick layer of vanilla frosting. watching dogs dig in the snow. it’s so fun and beautiful.. winter is the best. especially in utah.

2. i was early for work.

that never happens!

3. i got the brilliant idea to top my protein oatmeal with elise’s pumpkin banana bread.

this was 1/3 cup oats + 1 cup water cooked slowly on the stove, then i stirred in 1 scoop of vanilla protein powder and topped it with 1 TB trader joe’s pumpkin butter, 1 TB mighty maple peanut butter and a small hunk of pumpkin banana bread.

i have actually been eating the bread nonstop. i followed elise’s recipe for the most part, but i swapped 1 cup of flour for 2 servings of vanilla soy protein powder to up the protein a bit. you guys, it’s seriously so good!

4. i had my first kombucha since it’s been back on shelves.

5. i got my hair done. and my eyebrows waxed.

6. i ate leftovers for lunch.

because, you know, i love my leftovers!

1/2 of a stuffed chicken breast topped with my random tomato sauce (they were huge and i couldn’t finish mine last night!), roasted sweet potatoes & butternut squash and green beans.

7. i finally found a blazer and wore it for the first time today.

i’ve been searching for a blazer for awhile. i kept telling marshall i wanted a blazer. his reply was always, “what’s a blazer?” i am cheap so i didn’t want to buy one from banana republic or even gap. when i came across this nugget at forever 21, i was sold.

8. i won stefanie’s chobani giveaway!

marshall eats 12 chobanis each week. we buy them at costco (12 pack) each sunday and by the following friday, they are gone. he’s addicted. at least this winning helps support his habit! thanks stefanie :)

9. i found out that i won a prize in the marx foods mushroom recipe contest.

10. killer upper body workout.

i am not going to lie, i only strength trained once last week.. and it was my legs. today’s upper body workout was much needed!

11. we had tofu for dinner.

i love tofu! i don’t eat it often enough. tonight, i made a super random tofu stir fry with rice noodles.

this was simple. i pressed the tofu in my tofuXpress, diced it and then sauteed it with some sesame oil and grated garlic.

meanwhile, i heated fish sauce, sesame oil, sriracha, grated garlic and ginger in my wok.

i added frozen stir fry veggies and a few random ingredients: soy sauce, rice vinegar and black pepper sauce. i also threw in a handful of brown sugar for good measure.

next, i added bean sprouts and the tofu to the mix.

then let it all cook down..

i cooked some rice noodles and added them to the mix right before dishing it up.

12. i got four cute soup bowls for a total of $5!

13. it’s national pretzel day, national pumpkin day AND national mince meat pie day.

i love national food holidays. i love it even more when there are three in a day! to celebrate, i made pretzel bites.

i wanted to make pumpkin pretzel bites.. but find the pumpkin flavored kisses! i went with candy corn kisses and the original milk chocolate. and ate pumpkin banana bread while i made these. Winking smile i topped them with m&m’s and candy corns. i really don’t like candy corn, but they are cute!

I’ve honestly sat here for at least a minute trying to come up with one good thing about today. That is sad, right? :-( Hmmm…It was good because I’m healthy and have a great job.

love that blazer! you look super sassy. i’m trying to find a cute blazer too…the one i have now is wayyyyyy to small and i can’t seem to find anything else that i love as much!

i REALLY want one of those pretzel bites right now by the way. either flavor!
