i have had a hectic week at work this week.  i haven’t taken many food photos, but i thought i would show you my what my breakfast & lunch has been like (for the most part) every day this week.

breakfasts = the quick & easy protein shake


aside from my monday morning sales meeting breakfast, i’ve had a shake for breakfast every day this week. i have fallen in love with protein shakes as a breakfast meal again. i was hooked on drinking a protein shake for breakfast during my first BFL challenge.  i slowly moved away from using shake for breakfast and instead drank them post-workout. 

i love protein shakes.  when paired with fresh fruit, quality protein & a little fat, they really are a quick and filling alternative to any other breakfast out there (and take less time! and are portable!) i have loved blending these before leaving the house and drinking them on the way to work. it leaves me with more time to get things done in the morning.

here are the recipes for the shakes i’ve had this week:

tuesday: chia blueberry banana

  • 1 cup almond milk
  • 30g (1 scoop) vanilla protein powder
  • 1/2 cup frozen blueberries
  • 1/2 of a large banana
  • 1 cup spinach
  • 1 cup ice
  • 1/2 tsp guar gum (thickening agent)
  • 1/2 tsp xanthan gum (thickening agent)
  • 1 tsp chia seeds

the chia seeds don’t taste like anything, but they add amazing texture that i love! they also add healthy fat which = staying power in the fullness category.

wednesday: blueberry peach

  • 1 cup skim milk (cow’s)
  • 30g (1 scoop) vanilla protein powder
  • 1 cup frozen blueberries
  • 1/2 of a peach
  • 1 cup spinach
  • 1 cup ice
  • 1/2 tsp guar gum (thickening agent)
  • 1/2 tsp xanthan gum (thickening agent)

i love this fruity combination! i have recently started using cow’s milk again.  i didn’t prefer it there for awhile.. but then i started using marshall’s whole milk and rediscovered my liking for cow’s milk, so i ordered a half gallon of skim and it came with this week’s winder farms delivery.

thursday: chocolatey peanut butter banana

  • 1 cup almond milke
  • 30g (1 scoop) vanilla protein powder
  • 1/2 of a large banana
  • 2 TB PB2 (powdered peanut butter)
  • 1 TB unsweetened cocoa powder
  • 1 cup ice
  • 1/2 tsp guar gum (thickening agent)
  • 1/2 tsp xanthan gum (thickening agent)

as i was drinking this today, i realized that i like this almost as much (if not more) than an actual milk shake made with ice cream. seriously, it is that delicious. and healthy! sometimes you just need a lil’ chocolate in your life.

let’s talk about lunch.


i have had this salad three times this week! i took a minute out of my day on sunday to chop the following:

  • deli turkey breast
  • cucumbers
  • red bell pepper
  • romaine

i threw the items in zip lock bags and also toted an avocado, a container of low fat cottage cheese, baby carrots, broccoli florets, a few hard boiled eggs & grated cheese to work with me.

lay a bed of lettuce down, sliced and dice your egg & avocado, and then top with all your prepped ingredients!


so much goodness in one bowl.



the cottage cheese and avocado make it so you don’t even need to add dressing, but you definitely can for a little extra pizzazz.  i’ve been using an asiago garlic dressing that i purchased from the natural foods section of my grocery store.


i promise there is lettuce under there!


i didn’t have this salad today. i actually had a lunch date with emily! for those who miss her.. no worries, all is well in her world :)


this time of year, you are crazy if you don’t snack on fresh fruit as often as possible. that’s what i’ve been doing. by the cupful.


i haven’t been taking photos of dinners this week. i’d rather spend time with marshall and not worry about the photography end of things. but i will tell you this: two of the three nights we have had sandwiches & tomato soup. we did get fancy on monday and have paninis. i think i may actually spring for something delicious tonight, we’ll see how it plays out.

lucky for me, i don’t get sick of eating the same things over and over. it is convenient and inexpensive to eat this way, so i am glad i can tolerate it!

i have some fun & exciting new workouts to show you guys, but i will save that for another post. this one is already pretty long!

1. can you eat the same things day in and day out or do you crave variety? i like to change things up as often as i can because i love to cook and use it as a creative outlet, but when it comes to actually eating things—i can eat things over and over and never get sick of them.

2. hard question: favorite fruit? mine is peaches. runner up: watermelon.

I can definitely eat the same things over and over…albeit with a slight variation. The past two days I’ve done a garlic tofu scramble, just with a few slight tweaks to the veggies.

Oooh, fruit…peaches are at the top of my list now, but mangoes and pineapple are always up there too!

I NEED variety! I hate to eat the same thing twice. But my husband could eat the exact same thing every day and be happy.

I agree with Jessica! Need some variety but I live with a man who eats the same lunch every day lol. My favorite fruit (when perfectly ripe, of course) would be fuji apples, strawberries, and watermelon. YUMMMMM. :D

I like eating pretty much the same thing everyday and I guess that is a good thing since my diet is supa’ strict right now. 3 months out from competition- YIKES! Even before prep when I was doing BFL, I usually stuck to the same clean, whole foods then, too. I like routine, I guess, and I do NOT like to cook so I want things fast and easy:)

I sure wish I liked fruit, but the sad truth is-aside from berries-I’m not really into fruit that much. GASP!! Cantaloupe is yummy, though, but I eat it maybe once a year. I guess I just get my “fix” from your blog with all your beautiful pics. BTW- your camera is AWESOME. That salad looked downright sinful! YUM^2! :)

I’m actually kind of ridiculous with my need for variety–I hate leftovers, I will do anything to avoid them. I usually pawn them off on Seth:)
Favorite fruit? It changes by the day, but I’ve been groovin on mango and cherries lately.

That blueberry peach smoothie sounds DELISH! And has such simple ingredients =) I’m definitely gunna give it a try – it will be so great to have such a portable breakfast to take with me on my new long journey to law classes in the city!

i try to mix things up and eat seasonally though i admit i don’t mind eating the same things over and over :)

these days I have been having some variety but honestly, not that much with the whole contest prep thing. I have different proteins and veggies though which makes it a bit more exciting! i love protein shakes when they are all frothy and thick and milkshake-like!! i need to get the gums in my life! they are so darn expensive but I know last a LONG time so I should just bite the bullet nad do it it!

that salad looks delicious and so well balanced!!! i love the large veggie chunks…its like a healthy cobb salad a la Janetha G!!

That salad looks awesome – I love how easy it is to prep such a restaurant-grade salad, and perfectly healthy as well. The dressing isn’t necessary, true, but the kind you mentioned sounds awesome!

I can eat the same things day in and day out, and sometimes do! And fruit? ANYTHING!

i haven’t had a protein smoothie for breakfast in SO long. i used to be all about them until i fell in love with cold protein oats and eating everything with a spoon haha`

i’m glad you’re doing your married thing at night and not the photo thing. much better choice ;)

I could definitely eat the same thing every morning. My favorite is oatmeal! I absolutely love blueberries. I eat them with everything. I love peaches as well.

Ok so your salad lopoks gorgeous and mine never looks that pretty. Thats like restaurant pretty right there.

I dont have an issue with eatings things over and over again, I like to save money that way.

Blueberries are my favorite fruit :)

Oh my goodness girl, I have been consuming fruit by the buckets these days. I simply can not get enough and in fear that it will soon be over, I’m eating as much as I possibly can.

I’m not even going to attempt to answer this question. I’d kid myself if I had to pick just one of my favorite fruits! LoL

I think you can tell based on the fact that I always get a parfait at brunch that I am a creature of habit ;) I love shakes for breakfast. I’d be all about that blueberry peach. The lunch plates are totally beautiful. mmm avocado. Favorite fruit…oh gosh…Cantaloupe? Papaya?

1. I crave variety. This is important to me because I’ll get so bored otherwise. Kepa is the opposite so it’s interesting trying to meld our eating habits together.

haha, i’ve been eating the same things over and over again for a while now too. Interesting enough, it’s been protein shake breakfasts and salad beast lunches. Great minds think alike, eh?!

i like the ease of making the same thing all the time, but i love so many things that i try to switch it up. and fave fruit(s): PINEAPPLE! and apples (from Japan)!

Variety? Meh. I think I’ve been eating the same three meals for about two years now. No, not really. But I rotate only a small handful of breakfasts, lunches and dinners that I know are balanced but never really get sick of it. It works for me!

Fruit – I love it all and I’ve been devouring all the fruit I can get my hands on all summer. Favorite is probably strawberries, with watermelon a close second.

I LOVE shakes for breakfast. I have actually been trying to MAKE myself eat something else, just because that is all I have been eating for breakfast! :P

I can eat the same few things day in and day out. But it wouldn’t be all that healthy, me thinks. LOTS of smoothies and eggs and pasta. And sandwiches. ;) So I try to mix it up.

Favorite fruit is HARD. I love a good peach, but I also adore grapes, cherries and pineapple. I don’t think I could choose, really!

I have eaten smoothies for breakfast every work day for pretty much over a year now. I get tired of them occasionally but they seriously are so dang convenient.

Also, I ate tomato, mozz and basil sandwiches for lunch every day this week and never felt tired of them. All my ingredients are gone now and I’m sad that I have to find a new lunch :(

Favorite fruits are peaches and watermelons as well – especially if someone else cuts them up for me. Kiwis and red grapes are runners up.

Yay for your new couch, and that salad is dope. I want to eat it.

I very easily go into the routine of eating the same thing. If something is amazing, I have the mindset of not wanting to change it. :D Your salad, for example, looks *amazing.* I need to recreate that! :D

My favorite fruit would probably be watermelon or blueberries. So delicious. :D

I don’t really mind eating the same thing but I do crave variety. I’ve had a really similar lunch several days in a row a la that delicious salad of yours by just combining pinto beans, fresh mozzarella and what veggies we have chopped up with pita bread on the side. So simple but so filling and nutritious and delicious!

Favourite fruit. I am boring. Bananas. Love me a raspberry, kiwi and pineapple too though!

I love your salad – I’ve said it before and I’ll say it again, I have the worst time coming up with delicious salads at home. They just never seem appealing to me.

1) I get on food kicks for about a week or so. If I get sick of something I just find a different way to eat it (like your diff add-ins for smoothies) and it keeps me interested.

2) That is a hard one! I’m going to say at the moment it’s mango. But in the fall I’ll definitely be all about the pink ladies.

Love the new posting schedule/formats – I hope your life is going well and congrats on the new couch. We just got new furniture in March (after 5 years of old college crap) so I know how good it feels!

Ok, the salad is beautiful!

1. I go on “kicks” where I’ll eat the same thing for maybe a week, but then I need to mix it up.
2. Very tough. Bananas as far as practicality. Nectarines as far as taste :)

I can–and DO–eat the same things for breakfast and lunch every day. Breakfast: 0% Fage yogurt + gluten-free, high-protein cereal + fresh fruit. Lunch: salad with romaine, cabbage, 1/4 avocado, 1 oz. fat free cheese, tofu, and carrots. I mix it up for dinner, but I even have the same snacks every day (1 oz. of nut-cranberry mix, and an apple)! I just love my consistent foods and I don’t get sing of things. Although, like Lara, I do go on “kicks” as well…

if it’s something i really like I can eat it every day!!! that happens with Corns and Kabocha! it’s incredible that I’ve been eating them for years and I’m still craving them if I don’t eat. :D
fav fruit: PEACHES!!! I need to get some right now!!! :D
