pancakes and pizza.

WOW you guys want to win some kombucha, dontcha?

it’s been awhile. i thought i would bring some search engine terms to your attention, because they are fun and, let’s face it, sharing the search terms provides blog content for me and i don’t have to think of something else to ramble about. enjoy.

  • “boys wearing bras”.. sorry, no man boobs or drag queens on meals & moves
  • “i hate subway”.. ugh. ME TOO. samesies.
  • “savoury oats”.. no, i am not canadian nor am i british. if you want to see savoUry oats, check here or here!
  • “milk, cereal, woman”.. okay, this one makes total sense.
  • “grumpy coffee drinker”.. last time i checked, the reason i wasn’t grumpy was because of the coffee.
  • “tattoo ideas for wrist”.. this one makes me mad. and annoyed. this is the whole reason i hate tattoos. if you are going to get a tattoo, KNOW WHAT YOU WANT. don’t freaking GOOGLE ideas.
  • “elementary school peanut butter bars”.. OH THESE WERE THE BEST! remember those? my recipe tastes just like them. here it is.
  • “protein pancakes”.. you came to the right place. keep reading.

you may have heard about a new phenomenon sweeping blog land, pancake sunday, which was so lovingly started by HEABs.. my favorite tennessee dwelling, pancake loving foodie.

i don’t need a reason to eat anything, but i really like waffle wednesday because it is fun.. and so is pancake sunday!

when sunday rolls around, i usually whip up my own protein pancake recipe (here) but today i wanted to give a different recipe a whirl.

enter: allie’s low carb, life changing protein pancakes!

i omitted the berries, basically because i had none, and i did up the flour by just 1/2 tsp in the end because the batter was a tad runny. here is what went into these:

  • 2 TB + 1/2 tsp bob’s red mill coconut flour
  • 1/2 packet stevia in the raw
  • 1 egg+2 egg whites
  • 1 TB unsweetened almond milk
  • pinch of salt
  • 1/2 tsp baking powder
  • love

i blended all ingredients in the vita, poured the batter into a cup (where i added the additional flour) and cooked at medium heat on the stove.

i can only fit two pancakes on my skillet at a time, unfortunately. i really need a griddle so i can cook a bunch of pancakes at once. this recipe made SEVEN pancakes~ i had to nuke them by the end of the cooking process because pancakes number one and two were cold. but still.. amazing!

i topped the pancakes with trader joe’s almond butter with flax which was so generously sent to me by the lovely lauren. what a babe.

the pancake recipe alone is 115 calories, 5g fat, 4g carbs and 14g protein.  AWESOME, right?! you can lower the fat content by omitting the whole egg and upping the egg whites, i am sure, but i need a little yolk in my life every now and then!

thanks for the recipe, allie! i am doubling it next time :)

after my sunday flapjack fuel, it was time to hit the gym for some strength training. i also received the new issue of oxygen in the mail on saturday, so you can bet i squeezed some reading time in there as well. fun fact: a lot of people in utah say “squoze” instead of “squeezed”.. it was not until very recently that i learned “squoze” is NOT a real word!

i came home and refueled with a green really weird colored smoothie.

      in the mix:

    • 1 cup almond milk
    • 1 scoop vanilla whey protein powder
    • 2 handfuls frozen blueberries
    • 1/2 frozen banana
    • ice
    • xanthan gum
    • spinach

although this didn’t look appealing, it tasted fantastic!

after downing this i had to hurry and make the dessert for the BBQ marshall & i were headed to for his dad’s birthday.

his dad requested something “with chocolate and strawberries” and marshall wanted fruit pizza. well, i am never one to let anyone down.. so i combined the two requests!

chocolate covered strawberry pizza!!

there is nothing healthy about this dessert, folks. but.. i get a lot of requests asking how i make it, so i took photos this time.

first, spread two rolls of premade cookie dough onto a greased cookie sheet, i used pillsbury.

next, poke it.

bake the dough according to the package directions, but you may have to poke it a few more times while it is baking. check on it to make sure it is not one gigantic bubble that looks like the parachute you used to play with in elementary PE class.

let the crust cool.

for the “sauce”, mix 12 ounces whipped cream cheese with as much sweetened condensed milk as you need to make it just sweet enough, but not too sweet. the choice is yours as to how sweet you like it.

mix well, add a splash or two of vanilla extract.

refrigerate the sauce while the crust cools. it will firm up a bit.

frost the crust.

slice your fruit.  usually, i do a mix of berries, bananas, pears, apples, kiwis and peaches. you can use whatever you’d like. apples and pears do tend to turn brown once they hit the air so only use them if you are serving the pizza immediately.  today, i only used strawberries.

place your “toppings” on your pizza.

and it’s as easy as that! you’re done! but today, i took it a step further and added some chocolate ganache.

i mixed a bag of hershey’s milk chocolate chips with about 2/3 cup of heavy cream in a saucepan on medium/high heat.

be sure to stir it constantly so it doesn’t scorch.

when all the chocolate has melted, drizzle the ganache over your fruit pizza.

serious business.

let the fruit pizza bask in the sunshine until you are ready to head to your party. or.. you could keep it in the fridge.. that is probably smarter.

okay! that was fun. it is a super delicious dessert.. but it is also ridiculously indulgent. now you know.

next we went to marshall’s dad & stepmom’s house for a BBQ!

sandy (marshall’s stepmom) had prepared a deeeelicious meal of pork chops, salad, pasta salad, baked beans & mashed potatoes.

IMG_9809 IMG_9804IMG_9806

my plate:

i had a boatload of salad (sans dressing), some baked beans and a pork chop. the pork chops were marinated in a slightly spicy and very flavorful sauce, i really liked it!

it is always fun to see marshall’s family.. especially this guy:

he wouldn’t stay still for two seconds! that is the best photo i could snag :)

we just got home from the BBQ and marshall is laying on the couch with a killer headache. poor bear. i am going to shut down the technology and keep him company. i haven’t read blogs all weekend, but i will catch up with everyone tomorrow.

hope you enjoy your monday! oh, don’t forget to celebrate national grilled cheese day!

1. favorite item to BBQ? i love grilling. it is so hard to pick. among my favorite grilled foods: pineapple, asparagus, corn on the cob and chicken breasts. hey, it is my question, i can have four answers!!

hoooly giant tasty pizza! that looks delish.
i have a solution for your cold pancakes. :) take any old baking tray, turn your oven to a really low temp (i usually use 120F, its the lowest my oven goes) and stick the finished pancakes in there to keep warm.

And yup, taxes are donnne and moneys already locked down.
p.s. i made your protein coffee cake! loove it.

Katie April 12, 2010 at 10:55 am

Those pancakes look amazing! Do you think that I could use a different kind of flour and get the same results? Or…maybe I could just grind some coconut into flour?

closet365project April 12, 2010 at 11:03 am

CUTE scarf! I want it.

I love grilling marinated chicken. Ever so much. And my taxes are done. Hooray!

I was going to comment on something else, but I totally forgot what it was. Oh well.

caronae April 12, 2010 at 11:10 am

That dessert pizza sounds good! I like grilled zuchinni and yellow squash, chicken, salmon, and burgers. I wonder if bacon could be grilled? And I “did” my taxes already, aka, my mom’s accountant did a bunch of complicated business with everything and miraculously taxes were paid. Lol!
Happy Monday!

I LOOOOVE those search times. I always get some crazy ones, and I have no idea how or why sometimes :)

Your dessert pizza looks mighty tasty! You do a great job of baking and making but not partaking..yes, I just rhymed :)

snackface April 12, 2010 at 11:49 am

Get that cookie pizza out of my face. I want. So badly. But I’m trying to clean my act up after an indulgent weekend.

And those pancakes! Amazing that the whole thing’s only 115 cals!

Hmmm I don’t really grill anything myself, but grilled pineapple is insanely good.Back in my meat-eating days, I adored grilled turkey burgers stuffed with feta. Too good.

And taxes? The parents still take care of that. I don’t wanna grow up. I will have to hire someone to do that for me, fa sho.

Hope you have a marvelous Monday!!! Love you! xoxoxo

julie April 12, 2010 at 12:08 pm

duuuude your pancakes look perfection! i think i’ll be celebrating pancake sunday more times then just sunday this week well mainly because i won’t be able to celebrate it on sunday so i think it’s proper that i celebrate it twice this week just to make up for the fact that this past wednesday’s sucked balls.

i neeed to find me some coconut flour! where is you buy yours?

some day in life i will make fruit pizza.

Lara (Thinspired) April 12, 2010 at 12:12 pm

That right there is my favorite green smoothie mix! Though I haven’t really tried the gum yet, I just use the banana and that makes it thick enough. I also like using choc protein powder when I don’t have vanilla. YUM!

I don’t think anything beats a burger on the BBQ! That or corn on the cob :)

No taxes for me this year…all my income was earned in the UK!

homecookedem April 12, 2010 at 1:24 pm

Do you think that is HAS to be coconut flour in those pancakes? I wonder if I could substitute whole wheat instead? They look amazing!! :) I’ll have to try ’em out!! :)

peanutbutterfingers April 12, 2010 at 1:41 pm

okay between the pb bars & the strawberry pizza you’re making me hungry & i just ate a big snack! everything looks so stinkin’ tasty!

Tamizn April 12, 2010 at 1:48 pm

Kelly April 12, 2010 at 2:31 pm

You are adorable…I love the bangs!!

Susan April 12, 2010 at 2:50 pm

I still have to make fruit pizza! Thankfully, one of my friends has a birthday next week and it’s been requested that I bake. Yessssss.

My mom has the same plates. Circa 1979 I think ;)

1. Tough. Sounds boring, but there isn’t anything better than a juicy hamburger bbq-ed to perfection. Preferably my dad’s.

2. Just got my last T4 in the mail today!! T4 may be a Canadian term, it’s a record of earnings for one of the bazillion jobs I worked in 2009. I need to stop being such a job whore, doing my taxes would be a lot easier.

Oh yes… SQOUZE!?!?

Anne April 12, 2010 at 3:49 pm

haha girl, I totally had to drop by again to say that you just got me hooked on Kombucha! It’s on sale at my sunflower market through wednesday, so I just stopped by to grab like, 5 of em. I’m having the gingerade one right now and I love it! I seriously never thought I’d be drinking these things, haha.

Also, those pancakes look awesome!

Katie April 12, 2010 at 5:08 pm

Jamie April 12, 2010 at 6:24 pm

Ahh yes spinach makes for very weird colored smoothies!

I love grilled anything…especially corn on the cob.

Just did my taxes Saturday on turbo tax, it was actually super easy so I was thrilled.

elise April 12, 2010 at 7:44 pm

paijery April 12, 2010 at 10:47 pm

Mushrooms are my faaavorite food on the bbq. I could eat 1000 an hour. I am going to be trying grilled romaine as soon as it stops raining/snowing.

Those pancakes + me = tomorrow’s breakfast ♥

That strawberry/chocolate fruit pizza is stuck in my brain. I loove fruit pizza!!

Taxes done tonight! OH YEAH. xx

Danica April 13, 2010 at 4:18 pm
