hi everyone :) i am in a bit of a better mood!  i am ultra bummed that my super detailed weekend recap post was lost, but what can i do? no need to dwell. instead, i bring you an extremely shortened version of my weekend recap, david letterman style!

top ten things i did over the weekend!

*in chronological order..not in order of coolness*

number ten: ate some delicious chicken stir fry with chopsticks

i made this stir fry dish with celery, broccoli, water chestnuts, broccoli slaw and chicken.  the key to making the flavor really pop is to stir fry everything in sesame oil and garlic as opposed to any other kind of oil. the sesame oil really lends a delicious flavor to the dish.

fun fact: i read on danica’s blog that you should keep specialty oils in the fridge so they last longer!

i served the stir fry over brown rice.

number nine: i went to the movies with the boyf fiance on friday night.

we finally saw tim burton’s alice in wonderland.  which, by the way, was not nearly as epic as i had expected! what did you guys think? the cinematography was great.. but the story line was a little “meh” for me.

number eight: hung out with these characters.

number seven: got my bangs trimmed!

number six: went to a BBQ at our friend alex & steph’s and had some amazing things to eat…

sabrina made an excellent layered bean dip and threw a twist in with cream cheese instead of sour cream. fantastic.

katie made a really tasty red potato salad which made me happy, because i LOVE red potatoes. only second to the sweet variety ;)

i made a simple asparagus salad which consisted of black olives, diced mozzarella, quartered tomatoes, chopped asparagus and italian dressing.

step five is to mix it all up with some italian dressing.. here is the end result:

and marshall grilled some filet mignon for the both of us.. after he picked out which one would be his, aka which one was biggest, of course.

yum. i love steak. no shame in my carnivore game.

since it was my free meal, i enjoyed some dessert.. which was one of my favorites: fruit pizza! made by steph, who is a genius and colored the “sauce” part of the pizza blue! duh, why don’t i ever do that???

number five: enjoyed coconut protein pancakes for breakfast on sunday!

i had to. it was pancake sunday, after all :)

in the mix:

  • 1/3 cup oats
  • 1/3 cup low fat cottage cheese
  • 3 egg whites
  • 2 TB vanilla protein powder
  • 1/2 tsp coconut extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

the real kicker was the sprinkle of shredded coconut that went into the pancake during the baking process:

i topped the cakes with ICBINB spray and some log cabin syrup.  speaking of ICBINB.. go check out danica’s giveaway for a fridge makeover courtesy of ICBINB!

yum. every sunday should include pancakes. i smelled like pancakes for the rest of the day :)

number four: went snowboarding on sunday instead of doing my upper body workout!

very good decision. there are only a few more weekends to snowboard. upper body workouts can wait.

number three: made a green monster, then froze it for a few hours, then ate it. result: protein ice cream at its finest.

in the mix:

  • 1 scoop vanilla protein powder
  • 1 cup almond milk
  • 1/2 frozen banana
  • 20 frozen blueberries
  • ice
  • spinach

pulled pork, pulled chicken, funeral potatoes (it’s a utah thing), green salad, asparagus, fresh fruit.

that is kerrygold swiss on top of my chicken, FYI. THIS MEAL WAS SO GOOD! definitely the highlight of the weekend. thanks, momma b :)

number one: i ate something on a stick.. because yesterday was national eat something on a stick day!

Haha awesome top 10 :) My favorite stick food is probably street meat in Boston. A hot and spicy skewer of meat at 1am in Beantown can’t really be beat!

What a crazy, fun weekend…sheesh!Love your asparagus salad! The BBQ stuff all looks amazing. I think most, all meals at Mom’s are where it’s at ;)

favorite thing on a stick…hmm…probably those creamsicles that come in orange, banana, and chocolate…i can’t remember what they are called! I’ve only ever found them in utah.

If I were eating them still, corn dogs would be my fave food on a stick!

Why blue on the pizza – ewwy.

I felt the same way about Alice, and I saw it for free. Fun to watch, boring story. Plus I couldn’t understand half of what Johnny Depp was saying!

What a fun weekend! Protein ice cream?!?! YUM!!

I saw Alice in Wonderland this weekend too, and thought the SAME thing you did. It was visually appealing, but the story line was not good at all.

So I think the hilight of my weekend was the yoga show I went to on Sunday =D

Fruit is the best thing to eat on a stick, by far!!

Highlight of my weekend was discovering the deliciousness of Midori sours. The low point was the next morning. Favorite thing to eat on a stick is chocolate covered fruit…I love Edible Arrangement gift baskets!! Hope you had a great Monday!!

Excellent idea about freezing the green monster! will do that this weekend for my road trip :) my favourite thing to eat on a stick are the skewers from street vendors in Thailand.

That sounds like a pretty stellar weekend :) I agree with you about AIW; great cinematography and acting, boring plot line. And fruit dessert pizza? Awesome. As is the frozen GM. Simply brilliant.

I enjoyed Alice in Wonderland, but I’ve never read the book. My stepdad (we saw it as a family) thought it looked good and was well put to together, but he wasn’t crazy about the tweaks they made to the story line. I guess it depends on what you’re expecting from it.

Hmmm, best part of my weekend? Finally getting my eyebrows waxed and a haircut. Feels good to feel pretty =)
I don’t really eat anything on a stick, but when I was younger I LOVED corndogs. My all time favorite part of the annual Westchester County Fair that I went to to with my dad. It was a nice festival just outside of my city based home!

Ugh I LOVE fruit pizza and haven’t had any in forever! So jealous. The highlight of my weekend was a tie between running a crazy intense 5k and riding horses in the woods. My favorite thing to eat on a stick is fried chicken. Don’t really partake in food like that these days, but it sure is amazing!

I like a pickle on a stick. I know that sounds weird but they have them in some flea market in Florida that I go to when I visit my grandmother.

My highlight of my weekend was that I didn’t have to wake up early. Even though I naturally did wake up early, I didn’t have to!

I love top 10 lists! Perfect way to recap the weekend. Taco dip with cream cheese rocks my socks. It’s how my mom makes it. But she puts a layer of beef on there too, because we’re all carnivores as well ;)

Alice in Wonderland is one of my favourite books of all time and I cannot bring myself to go see that movie. I’m not into Tim Burton and I reallyreally dislike Johnny Depp. Especially when he wears excessive makeup.

1. Highlight of my weekend was, oddly, doing a fitness test. Oh, and getting a certificate for completing my PT classes. I like getting things I can hang on my wall of accomplishments :)

2. MEAT! Namely souvlaki :D

foods on a stick…HOW can I pick?! Cotton candy, corn dogs (no shame in my processed food game…k, I have had 2 corndogs in my life, both when I was about 7), souvlaki (with tzatziki to dip). Um, everything is better on a stick. I want fondue now.
