  • my move: I am learning to love moves. I walk a lot and I love the elliptical at the gym, but in the new year I want to embrace moving more. I haven’t been able to drive for a year because my husband’s car is a manual transmission, and so I have only gone to the gym when a buddy was also going, meaning I slack off a lot. I do walk at least 2mi, at least 2x a week but it’s a far cry from my activity level when working downtown and walking the commute and taking 90 stairs a day multiple times. I need to learn to enjoy working out at home, and how to drive the car so I can go to the gym myself. :)
  • my meal: But meals? Never had a problem with those. I’m a vegetarian trying to be as vegan as possible. My latest love is cold vegetable salads. I roast my favorite vegetables for a sweet, smooth treat, chill, and toss with homemade dressing. For a fuller meal, I add beans and pasta or rice (also chilled.)

My favorite dressing recipe follows!

Tangy Pepper Sauce
1 part olive oil (EVOO not necessary)
1 part apple cider vinegar
1/4 part pure maple syrup (you can start with less and add more if you like)
Fresh ground black pepper – LOTS
Dried garlic flakes – LOTS (try to use the flakes instead of powder if you can)
Whisk, then heat so it reduces some (if you like a more syrupy sauce, add some cornstarch here). Will keep about 5 days. Works great on pretty much anything.

I did not like working out at all for years and then all of a sudden the bug bit me and there was no turning back. I was a total couch potato, which is way less “movey” than you are now. who knows, you might get ‘bit’ :-)

You know I’ve never heard of garlic flakes, only onion flakes. I MUST keep an eye out for that b/c I don’t always love having fresh garlic around. Good to heat it also so it reduces- sounds really good- thanks!
