  • my meal:  homemade orange scones/tea biscuits served with blood red orange slice.

Recipe
Orange scone/tea biscuit
I had these for breakfast or dessert…wth a smear of local honey on top (they are not very sweet on their own!) But delightful!

3 cups all-purpose flour

4 tbsp. granulated sugar

4 tsp. baking powder

1 1/2 tsp salt  ( I might have only put in one)

1/3 cup margarine or butter (healthy one)

2 eggs

3/4 cup orange juice

3 Tbsp. butter, softened

Zest from the orange

2 tbsp. sugar

In bowl, whisk flour, sugar, baking powder and salt.  Cut in margarine until the mixture looks like dry crumbs.  Beat eggs with orange juice; drizzle over the crumbs, tossing with fork to moisten.  (Don’t over mix, just until the dough is wet.)   Carefully put dough into a 8 x 8″ buttered pan and pan evenly. Spread dough with 3 Tbsp. butter and sprinkle with sugar and a little orange zest.

P.S.  I didn’t spread butter on the top of mine.  I only sprinkled the dough with a little sugar.

I never met a scone I didn’t like. And somehow i think I’d love this one- thanks for the recipe!

I’ll have to try out the scone recipe. Never attempted one before!
