Hi Meals and Moves readers!

I’m so excited Janetha called for some favourite meals and moves to share!

  • my name: Allison
  • where i live: Calgary, Canada
  • my blog: I write a healthy living blog called Eat Clean Live Green, which is all about my journey to a healthier life, by eating (mostly!) clean foods and decreasing my impact on the environment.
  • my move: My favourite move is running! It’s a great cardio workout, and gives you time for yourself to zone out and think. This winter, I’m running outside when it’s nice out, but I’m also getting some treadmill time in when it’s cold (for some HIIT a la Janetha!) I’m planning on running my first half-marathon this summer. For new runners, I love the Couch to 5k program, it’s a great way to start running, with lots of walking mixed in.
  • my meal: While I couldn’t pick a favourite meal (although pumpkin oatmeal is a possibility!) one meal I love to make is what I call Apple and Squash Chicken Sausage Mix

    Ingredients

    • 1 Acorn Squash
    • Olive Oil
    • 1 lb ground chicken or chicken sausage (preferable organic or free-range)
    • 1 tsp peppercorns
    • 1/2 tsp sage
    • 1 chopped medium onion
    • 1 chopped apple
    • 2-3 cups spinach
    • Brown rice, cooked

    Directions

    1. Slice acorn squash in half. Remove the seeds (you can save these and roast them!).
    2. Drizzle with olive oil, and place in a baking pan. Add 1/4 inch water to pan.
    3. Roast squash at 400* for 35-40 minutes, until squash is tender.
    4. Meanwhile, brown chicken sausage.
    5. Add peppercorns, sage and onion.  Once meat is browned and onions are soft, add apple. Let cook until apple softens.
    6. Once just about ready, add spinach. Stir until spinach wilts slightly.
    7. Combine squash with chicken/apple/spinach mixture, and serve over brown rice.

I love the sweet of the apple of the savory with the sausage. I have a bag of apples that looked soooo good and were only $1 for the whole organic bag. Well, not good. So I’m thinking i bake them or put them in other dishes cooked- this would be perfect! Thanks.

Yay Allison! So happy to see your lovely face on here :) We’ll be half-mary training together. When the snow melts of course. I take it February running is just as suicidal in Calgary as it is here in NB ;)
