almost forgot about you ;) i kid.

ahem. first and foremost i would like to say HAPPY FREAKING BIRTHDAY TO MY FAVE EVERYTHINGTARIAN EVVVVER! hope you have had a smashing day my curly haired, long legged, drop dead gorgeous friend :)

also~HAPPY FIRST DAY OF WINTER :D yahoo.

ok. so. holy guacamole.  i have been slacking in the blog department these past couple of days!  my bad.  BUT.. i have been up to lots + lots of fun and delicious things.  instead of rambling i will dive right into the recap head first.  i am not showing you all of it.  you would kill me.  just the highlights.

saturday.

yep! that is where i left off.  saturday night i joined my mom, sister (suni) and sister-in-law (lindsay) for a dinner out and the jon schmidt concert.  he’s this piano dude.

we ate at the tin angel cafe and it was just about the cutest place  i’ve ever had the opportunity to dine.  some of you old timers may remember when foodbuzz sent me to the share our strength’s taste of the nation back in august.  well, my very favorite thing i tried at the whole event just so happened to be from tin angel cafe!  so i knew dinner was going to be top notch.

it was freezing outside so, to warm up, i started my meal with some black coffee.

isn’t the cup and saucer adorable?!  and that is just the beginning of cute-dish-overload.  we ordered the cheese plate as an appetizer~

that was probably the fanciest cheese plate ever to grace my presence.  my favorite was the brie.  the gorgonzola hurt my tongue a little (i have geographic tongue) and the other cheese was something i am not familiar with.  it was an italian cheese that reminded me of asiago but was not as nutty, sharp or pungent.  it was delicious.  the pine nuts were also a favorite of mine.

for our entrees, we all decided to get something different so we could snag bites of each others’ dishes.

Pumpkin & Goat’s Cheese Farfalle with Shrimp Skewers

Puree of Pumpkin blended with Goat’s Cheese, White Wine, and Cream then tossed with Farfalle Pasta and topped with Herb Grilled Shrimp Skewers, Red Pepper Confit, and Crispy Panchetta.

go ahead and drool at that description alone.. because i did.  i checked the menu out before we went and already knew this is what i would be ordering!  there were big chunks of pumpkin throughout the pasta and i am a huge fan of goat cheese mixed with pumpkin.  the roasted red peppers and bacon also blended fabulously with the rest of the dish.  A+!

this was the special and i have no idea what they called it.  but it was seared scallops with a basil risotto cake and steamed veggies.
uh-maze-ing.

the basil risotto cake was my favorite.  i loved how it was crispy on the outside and packed a strong basil flavor (one of my favorite herbs!).  this dish had the best presentation by far!

Spinach Salad with Poached Pear and Gorgonzola

Fresh Organic Baby Spinach, sliced Pear, Grape Tomatoes, and Gorgonzola Cheese topped with Candied Almonds and Citrus Lavender Vinaigrette.

this reminded us a bit of the pear salad we made on thanksgiving.  it was really good~i have decided pear and gorgonzola are a match made in heaven!

Chicken Al Forno

House-Breaded Organic Chicken baked and striped with Roasted Garlic Tomato Pomodoro and topped with Shaved Parmesan-Reggiano and served with Broccolini and Fresh Linguine tossed in Olive and Truffle Oil.

another winner.  as if i was surprised!  i loved the breading on the chicken, it was very flavorful and added incredible texture.  the shaved cheese on top was a nice touch.

i loved how all the plates were different!  they were all old, antiquey plates and the silverware was the same way.

the walls were adorned with jewelry which was for sale.

the bill came with four mini cookies that tasted like almond rum biscotti.

the concert was good.. but long.. i mean i just don’t think i am wired to love 3 hours straight of piano music.  but it was still a good time and fun to spend time with my fam!  thanks mom, sure do love you :)

sunday funday! snowboarded my face off for a few hours…

and then decided to pick my face up and glue it back on so i could eat this banging chicken quesadilla..

i layered laughing cow light, sharp cheddar, chicken, TJ’s black bean dip and TJ’s corn salsa all on a whole wheat tortilla.

sliced it into quarters and had some salsa on the side.. bon appetit!  a delicious lunch that took me about 5 minutes to make.

sunday night i made 125 cookies.. 4 different kinds.  i made chocolate chip with red & green dark chocolate m&ms instead of chips, snickerdoodles, peanut butter cookies and pumpkin chocolate chip cookies.

and i didn’t take photos.  sorry.  i ended up putting them into really cute gift bags and giving them to my co-workers today.  hope you can imagine how cute they were :)

monday.

oh, that’s today!  see how speedy this recap has been?  well the meals were all pretty typical.. egg scrambles and greek yogurt messes.. but dinner was fab!  today happens to be national hamburger day so i had to go with it and whip up a nice, juicy burger!

i used 91% lean ground beef and kept it simple, seasoning it with only salt & pepper.

the star of the show was this basil & garlic gouda..

YUM.  i LOVE me some gouda!  and like i said earlier, basil is one of my favorite herbs.  i had to buy this cheese when i saw it!

on the burger: mustard, ketchup, spinach, red onion, avocado & tomato.  simple and perfect.

oh and guess what!  kailey you would be proud.  momma b whipped up her very first batch of cheetahs!

my workout today was mediocre at best.  but hey~at least i did something..right? something is better than nothing.  and i am lucky to have made it onto that treadmill considering how busy i am this week!  so i am stoked.
20 minute hills routine:

  • 1 min warmup 4 MPH incline=0
  • incline=15
  • 1 min 2.0 MPH
  • 1 min 2.5 MPH
  • 1 min 3.0 MPH
  • 1 min 3.5 MPH
  • 1 min 4.0 MPH
  • 1 min 4.5 MPH
  • repeat three times
  • cooldown 1 min 3.0 MPH incline=0

so yeah, the speeds were wimpy.. but the incline was 15% (which is the max my treadmill will go) so it ended up being a great workout!  full on sweat sesh for sure.

well kids.  that is seriously all i’ve got for tonight. no rambles, no stories.  just the facts.  sorry to be such a bore but i still have a lot to do tonight AND a sick boyf to attend to!  poor bear.

i will be back tomorrow with (hopefully) something more exciting to say.

1. in honor of national hamburger day~what is your favorite hamburger/veggie burger/turkey burger/etc topper? 
mine is, hands down, sautéed mushrooms.

2.  favorite season and why? winter is my favorite for sure. i LOVE snow and snowboarding and i love all the holidays that winter brings.. christmas, new years, GROUNDHOG DAY! um, isn’t that everyone’s fave?

Janetha, you’re rocking your snowboarding attire. Rocking it. Growing up in Tucson, AZ, ah well, I don’t know seasons. I do have favorite months thought, and that’d be November and February. Perfect weather, and Thanksgiving, and my birthday! Awesome.

Freaking scared to move to NY in the middle of January, to snow and coldness. Freaking scared.

Oh wow – where do I begin? First off your family is so good-looking, secondly – you look so cute in hats! Thirdly – that food at the restaurant was holy-mother-of-all-beans SOOOO YUMMY looking!! The goat cheese pasta…wow….

Snowboarding/skiing – FUN!! I’m a skiier that’s why I put the slash in there. :) Looks like you had beautiful weather, too! That quesadilla looks bangin’…always a favorite of mine..

My favorite season used to be summer when we lived in CA because I would spend all my time at the beach, but now I love winter because it makes me think of Christmas and Christmas is definitely my favorite holiday!

THAT QUESADILLA LOOKS AMAZING!!! Omg, you’re a genius. And isn’t the bean dip yummy?? I still need to try that corn salsa!! Sooo remaking it with more cheese and/or FAKE chicken….possibly? HAHA
