eep! it is late! 11:02 and i haven’t started blogging yet. i was too busy reading all of your blogs tonight, so much good stuff to read in blog land these days. i am also looking for an epic recipe to make my family for dinner sunday.. the whole shabang.. main course, side dishes.. you know. so if you have any stellar suggestions, send them my way!
so this will be a tad on the lackluster side since i am going to do a fly-by blog sesh. hope you all don’t mind! i am sure it will end up long and rambly because that is just how we do.
oh for the record that adorable little girl in my last post was not my REAL niece, but she is one of my bestie’s little girls.. she has been on the blog before. i definitely consider her my niece though! thanks for the nice words about her.. she is pretty dang adorable.
i am happy to announce that my appetite was back on track this morning! first off i started thirsty thursday off right and chugged 48 oz of water on the commute to work. *ahhhh*<—that is more of a refreshing “ahhh” sound, not like a freaked out sound. ok.
meal 1: protein oats with mighty maple @ 9:30 AM
*insert me singing depeche mode’s “i just can’t get enough” here*
ah protein oats, you never fail me. i have been wanting to make some overnight oats but i keep forgetting. and then i have ended up at marshall’s house every night this week where there are no oats in sight. so yeah. i do have a few things on the breakfast list though! i should switch it up from these.. i am craving:
- pumpkin oats
- chocolate macaroon breakfast cookie
- overnight oats with greek yogurt & peaches
- egg & cheddar breakfast sandwich
so maybe i will venture out of my mighty maple protein oats soon.. maybe.
meal 2: baller wrap @ 12:30 PM
*toot toot* goes my own horn. this was incredible. the layers?
- flat out base
- crimini mushrooms
- peach salsa
- grilled chicken
- honey mustard
- red pepper
- laughing cow light
- black pepper
i had an internal debate while fixing this wrap.
let’s pause for a moment and talk about mustard.
i was like.. hmm, honey mustard? dijon mustard? yellow mustard? horseradish mustard? decisions, decisions! and yes, they were all choices i had on hand. when i was growing up i hated mustard with all my heart and soul.. kind of how i hate raisins still, to this day.. anyway, i hated it. whenever i ate at a friends house and their mom put MUSTARD on something i would not touch it with a 10 foot pole. the benson family grew up with mayo on our sandwiches (and in our guacamole, but that is a story for another day). we did not eat mustard.. well at least i didn’t.. i guess my sisters can comment and speak their position on it.
anyway, this hatred for mustard lasted all the way until high school. in high school i started getting the tasty turkey bagel sandwich at eintstein’s and it had honey mustard. i dug it. it was great. but i still hated yellow mustard all through high school. dijon was barely tolerable.
no idea when it was but i guess maybe one day i woke up and my taste buds had turned over a new, mustard-loving leaf! because i love it now. all types, all brands, all colors. i don’t know if i would take my love affair with mustard as far as marshall does, he will eat mustard straight from the packets and dips his fries in it, but it is safe to say i love mustard so much now. i sort of am sad that i hated it for 20+ years! kind of like i got ripped off from all that mustard enjoyment, ya know??
anyway, i went with the honey mustard today. the end.
i also ate some green beans with my wrap
and today was a busy day at the office.. i was glad my appetite was back on track and i wasn’t full all day! when snack time came i welcomed it with
open arms an open mouth!
meal 3: peanut butter “mousse” + TJ’s 9 grain cereal @ 4:00 PM
have you guys ever mixed greek yogurt with PB2? well it is fabulous and it results in this decadent peanut butter mousse. i haven’t had it in awhile and i forgot how sinful it tastes! i topped it with 2/3 cup of TJ’s honey almond flax 9 grain and it worked out to be a perfectly balanced BFL meal! 35g protein, 35g carbs, 6g fat, 5g fiber, 321 calories.. a protein/carb/fat ratio of 41/41/18! yayer.
oh P.S. this is a direct result of being turbo busy and always having to eat at my desk!:
ummmm.. all but one of those dishes are from today alone! haha.
well after work i had automobile selling business to attend to!
two and a half hours later my 4runner was officially sold and i no longer have 2 car payments, 2 insurance payments, 2 headaches.. yadda yadda. go me!
it was time for a run after all that paperwork!
it was a lovely evening so i ran outside! i took a cue from susan and tried a running/walking method. i ran 4 minutes and walked 1.. she runs 9 minutes but i am not quite that hardcore ;)
i ended up running 3.1 miles in 28 minutes. stats were: max HR 177 average HR 154 calories burned 245
it was a refreshing change to run outdoors and see the beautiful sunset! but running outside is hard work!
after my run it was straight to the grocery store to snag some items for dinner, walking back to my car i dug right into this organic honeycrisp apple.. my fave!
and then i went to marshall’s to make dinner.
meal 4: chicken masala with a slew of veggies & a slice of WW toast @ 9:30 PM
hmmm.. crappy lighting. good food!
i just went the easy route and used trader joe’s masala simmer sauce ;) it is definitely one of my favorite jarred sauces! i added chicken, broccoli, cauliflower, onion, mushrooms & red pepper and let it simmer for a long time, making dinner super late!
it was worth the wait. i munched on some veggies & hummus while i cooked. this meza hummus was on sale for 3 dollar. holler.
it was no sabra but it was still really good!
whew. and now i am typing.. and dozing off.. with my loves..
yeah, only 4 meals in today. but if i get a hankering for something sweet (which i might…) then i will peel myself off the bed and try one of these glorious numbers!:
glory! chobani rocks my face off! they sent me a plethora of greek yogurt varieties to try out. thanks chobani! i am like a kid in a candy store over here, do you know which flavor i will be trying first? it is pretty obvious.. if you know me..take a guess!
1. what is your favorite type/flavor of mustard? have you always been a mustard lover or was it an acquired taste for you? my answer is up there in the time out talk.
2. what are some jarred sauces do you like to use when you are short on time/lazy/tired/hungry? from scratch is what i prefer.. but trader joe’s has some fab jarred sauces! my favorites are the masala that i used tonight and the picatta sauce. really good jarred sauces are few and far between in my opinion!
YAY for flashback friday tomorrow! and don’t forget to give me some suggestions for sunday dinner :)
