well, allison was all about the clueless references today and so i figured i could teleport you all back to 1995 as well with my title ;) more on the baking extravaganza in a bit.

a lot of you were wondering about the recipe for the mango chutney as well as the almond crusted chicken i made sunday.  i made a recipe page for the chutney, you can find it by clicking here.  as far as the chicken goes, all i did was throw some almonds in the blender and then mixed that with some bread crumbs, then dipped the chicken in some egg whites, in the bread crumb+almond mixture and then into some slivered almonds (more for show) and then threw the chicken in a pan with some olive oil for about 3 minutes on each side. super easy! and super tasty.

thanks for the kind comments on last night’s post. i am ok, just was in some kinda funk and i think i have snapped out of it now :D

today is a totally different story.  even though i was back at work, i had a great day, so let me ramble about it!

since monday was a holiday we had our sales meeting at the original pancake house today. i got the usual suspects. except the coffee was brought to my by the boyf this morning (we work together) and so i took my coffee with me in my boss’ truck and proceeded to accidentally allow the lid to pop off and it spilled allllll over his truck! woops! sorry boss.

i had a hair appointment at 10 (hi lisa!) and so i bailed, went to that, forgot to take before and after photos (woops!) and by the time i was done around 12:20 i was starving my face off.  it was back to the office for lunch!

my legs are SO SO SO sore to the maxxx from my lower body workout yesterday! it was a doozy and i have super bad (or good?) DOMS! so i knew i had to run on the treadmill for my HIIT to stretch out these sore muscles. please pronounce muscles like “musk-els” because that is how i just did in my head. ok thanks.

notice how slow i was, that is a direct result of the sore legs. also notice the lowered average HR and lowered max HR. i need to work on kicking it up a notch and making that average HR during HIIT be at least a 155. next time.

after waiting an hour from the time i finished HIIT i whipped up some dinner.

i mixed the tuna with some cottage cheese and annie’s dijon and threw a few diced pickles in for the ride and then laid it all atop a sandwich thin then put the goat cheese on top and put it in the toaster oven until it was melty and fantastic.

i also had some carrots with a side of 4 dogs…

the people over at nunaturals contacted me asking me if i would like to try their products.  i am not usually one to use artificial sweeteners because i haaate the bad aftertaste, but then i saw that april said this stuff doesn’t have the afterfunk like most sweeteners do! so i was stoked. i used this in my baking adventures tonight along with another sample i received from greens+, some chia seeds!

almond chiaseed protein muffins!

i LOVE almond poppyseed muffins, so i replaced the poppyseed for chia seed and used the nunatural baking blend as my sweetener. beefed the protein content up with a few protein faves: egg whites, greek yogurt & protein powder, and i was in business!

i will be making a recipe page for these bad boys as soon as i calculate the nutrition info, but here are the ingredients i used (you will notice i don’t measure everything when i bake..oops):

dry:

  • 1/2 cup whole wheat pastry flour
  • about 2/3 cup oats, give or take
  • 2 scoops vanilla EAS premium protein powder (54g worth of protein)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp nunaturals baking blend
  • 15g greens+ chia seeds
  • big handful of almonds that i chopped up in the vitamix beforehand

wet:

  • 1 cup 0% fage
  • 3 egg whites + 1 whole egg
  • 1-2 tsp almond extract.. just eyeballed that one

mixed the wet with the dry and then divided them out into 12 muffins, placed a whole almond on top for good looks.. oh and i grabbed a handful of almonds to do the garnish and i just so happened to grab 12! i love it when that kind of thing happens, i am a numbers geek :P

of course, i had to try out my finished product ;)

i guess i should count that as meal 5? i am off to calculate the stats… and try not to eat another one!! i will have the recipe page & stats posted tomorrow, for those of you who care about that sorta thang.

oh and i am so thirsty today. i think i’ve had nearly 2 gallons of water. whoooaaahhtshahnfjekwcndw. thirsty times infinity plus sixteen!

OH yeah remember how i was going to a concert tonight? i told marshall to get tickets a month ago, and then 3 weeks ago, and the 2 weeks ago, and then last week. and yesterday. it sold out. ugh.. i am pretty bummed. but at least i made a delicious creation in lieu of the concert.. still bummed though.. boys boys boys. oh well, life goes on!

I didn’t get a chance to comment on this one yesterday, but I just had to pop back in and say LOVE the Clueless reference! That was probably my all time favorite movie as a teenager, and still is in the top 5!

Aaaaaand those muffins look amazing!

Just now catching up buuuuut…

Glad you are feeling better!! We all need a night off sometimes :) And I’m totally glad to see your cottage cheese+chickpea+chicken+ranch combo back, I missed it.

No shame in taking it easy on our sore body parts, your next session will be amazing cuz you cut yourself a break!

1. i consider my addition of real cheese and spinach to be a grown up version of a grilled cheese.

2. I use Splenda, but only 2 a day in my morning coffee, and sometimes one packet in my oatmeal. I don’t think 3 packets are gonna kill me in the long run. I hope ;)
